Spicy Sweet Binagoongan Squid

Searching for a very simple squid dish but you can’t seems to find the right one? I think this recipe is a good choice because not only is it simple but it also tasty specially if you are fond of eating Filipino foods or other Southeast Asian foods. Because on the ingredients that stands out in this recipe is the bagoong alamang (shrimp paste). Although the amount is only a few tablespoon, it is salty and pungent which some foreigners might not like it.

Not commonly used on Filipino dishes but some Filipino popular dishes like kare-kare or pinakbet will not be complete without bagoong alamang. This spicy sweet binagoongan squid is cooked stir fried style and mixed with sweet chili sauce to make it sweet and spicy. Then of course the bagoong alamang and the rest of the ingredients such as oyster sauce, tomatoes, aromaticsĀ  (garlic, onion and ginger) to make this dish savory and tasty.

How to Cook Spicy Sweet Binagoongan Squid

Ingredients

  • 2 pcs medium sized squid
  • 4 cloves garlic
  • 1 tap. minced ginger
  • 1 onion
  • 2 small tomatoes
  • 1 to 2 Tbsp. shrimp paste bagoong
  • 2 Tbsp. sweet chili sauce
  • 2 Tbsp. oyster sauce
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 red bird's eye chili siling labuyo
  • cooking oil

Instructions

How to Cook Spicy Sweet Binagoongan Squid

  • Clean the squid by removing the backbone, ink sac, innards and beak. Wash in running water and drain in a colander.
  • Slice the squid into half an 2 cm thick rings . Divide each ring into halves and score each piece then set aside. You can also slice the head and tentacles or leave it whole.
  • Heat 1 to 2 Tbsp. of ccoking oil in a pan and saute garlic, ginger and onion. Saute for a few seconds. Then add the bagoong alamang (shrimp paste) and stir for a few seconds.
  • Then add sweet chili sauce, oyster sauce and tomatoes. Stir for a few seconds then add 1/4 cup water and simmer until tomatoes are tender.
  • Then add tjhe sliced squid and stir then cook for 2 to 3 minutes or until the squid is cooked. Be carefull not to overcook because it will become tough and chewy.
  • Then add the bellpeppers and leeks and stir for a few seconds. Turn off heat then serve immediately. Best served with cooked plain rice or fried rice.
