Green Peas with Quail Eggs

Another delicious vegetable dish consisting of green peas, pork, shrimps, vegetables like chayote, string beans and quail eggs. Very similar to the popular chop suey dish. If some how you are allergic to shrimps, you can substitute the pork and shrimps with chicken meat, liver and giblets. And then substitute the shrimp juice with chicken broth.

To cook sweet peas with quail eggs; Cook pork in 1/2 cup water until tender. Set aside. Saute garlic until golden brown. Drop in onion. After 2 minutes, add pork and shrimps. Stir cook and season with fish sauce. Then add all the ingredients except sweet peas, quail eggs, and cashew nuts. Pour in water with shrimp juice and cover. Let boil until the vegetables are half cooked. Add sesame oil and thicken with dissolved cornstarch. Then add green peas. Cook for 2 minutes more and mek sure not to overcook the vegetables. Add quail eggs when you are about to serve and sprinkle with chopped cashew nuts on top.

Ingredients

  • 1/2 kilo kilo fresh green peas
  • 12 pcs pcs hard boiled quail eggs shelled
  • 100 grams fresh shrimps shelled
  • 100 grams pork belly cut into small cubes
  • 1 medium sized chayote cut into small cubes
  • 1 nedium sized carrot cut into small cubes
  • 10 pcs stringbeans or Baguio beans cut into small pieces
  • 2 stalks celery cut into small sizes
  • 1 large onion minced
  • 3 cloves garlic crushed
  • 1 Tbsp. sesame oil
  • 2 Tbsp. cooking oil
  • 1 cup water with shrimp juice
  • 1 Tbsp. fish sauce or patis
  • 1 Tbsp. MSG or granulated seasoning
  • 1 Tbsp. cornstarch dissolve in 2 Tbsp. water
  • chopped cashew nuts for garnishing
  • salt to taste

Instructions

How to cook Sweet Peas with Quail Eggs:

  • Cook pork in 1/2 cup water until tender. Set aside.
  • Saute garlic until golden brown. Drop in onion. After 2 minutes, add pork and shrimps. Stir cook and season with fish sauce.
  • Then add all the ingredients except sweet peas, quail eggs, and cashew nuts.
  • Pour in water with shrimp juice and cover. (To make the shrimp juice, pound the shrimp heads until grounded. Pour a small amount of water and strain to collect the juice).
  • Let boil until the vegetables are half cooked. Add sesame oil and thicken with dissolved cornstarch.
  • Then add green peas. Cook for 2 minutes more and mek sure not to overcook the vegetables.
  • Add quail eggs when you are about to serve and sprinkle with chopped cashew nuts on top.
