Jollibee Burger Steak Recipe with Mushroom Gravy

Making a burger steak is as simple as making your hamburger. You will find it so easy to prepare. This is somewhat a copy cat of the Jollibee burger steak, a savory and moist beef burgers smothered with a rich and tasty mushroom gravy sauce paired with steaming rice or mashed potatoes. This is actually a Pinoy version of Salisbury steak and one of the cheapest dish on the Jollibee’s menu and it could be cheaper if you will make your own burger steak with mushroom gravy.

A Filipino Twist on a Comfort Classic

There’s just something so comforting about a good burger steak. It takes me back to lazy Sunday afternoons when my family would gather around the table, all eagerly waiting for lunch. My earliest memories of burger steak were in one of my uncles coming home with a pack of frozen patties, manifesting a great need to recreate that familiar dish from a certain fast-food giant we all know and love. He would just cook them in a pan, smother them in rich mushroom gravy, and serve them atop fluffy steamed rice. Not exactly a gourmet meal, but that kind of meal that lets you feel at home. It was as close to a Jollibee burger steak as you could get back then!

As I grew older, I started realizing how easily one could make this at home from scratch and – surprise – even more flavorful and cost-effective. When my sister-in-law came home from her family visit in the province, she brought a mix of beef and pork to be used for the patties variation. For me, her version is so much richer and tenderer in a single bite, which, ever since, has become my standard when making that comfort food favorite. Every time I recreate a Jollibee burger steak recipe at home, I’m reminded of her take on this classic.

Pinoy Twist on Salisbury Steak

For our non-Pinoys, this is a Pinoy version of the famous American Salisbury steak. Its concept is simple: a tender beef patty drenched in gravy. So here’s the attempt, done our way, Filipino style. Of course, the thing that makes it stand out is the mushroom gravy, but paired with that are either rice or mashed potatoes. Childhood memories were always synonymous with a plate of rice, most beautifully steamed, with its plainness sucking up every bit of the savory sauce in a way that mirrors a Jollibee burger steak .

It has now become one of those comfort foods, especially to those like us who grew up and cherished the best fast-food chain. But rather than lining up for your order, why not prepare it at home? With only a few ingredients, you can recreate that budget-friendly yet satisfying Jollibee burger steak everybody loves.

The Secret to Juicy Patties

In this recipe, all praise goes to the patties. My best friend once shared her secret to keeping those juicy by mixing in some ground pork and beef. Beef gives the patties that boastful, meaty flavor we want, while pork keeps everything moist and tender. And it is a tip I swear by because if I ever prepare this for family gatherings, everyone lights up their eyes at that first bite.

To give them the right texture, I add a little milk-soaked breadcrumb so that they get bound without drying. A dash of Worcestershire sauce is added to deepen the flavor of the meat, and of course, all that garlic and onion for an extra layer of flavor to those patties. After making all the patties, I love chilling them in the freezer for about 30 minutes. It sets them because they hold their shape better while frying later, which is key to a successful Jollibee burger steak attempt.

Mushroom Gravy Magic

Ah, mushroom gravy. To me, this is the real main attraction of the dish. I remember when I first tried my hand at making it on my own. Mushrooms used to be this horror that I used to dread making. After all, I thought gravy was complex until I learned its basic skills when I found out how easy and satisfying it was to make. First, you quickly sauté the mushrooms and get a good sear on them to bring out their natural umami flavor. Then, in the same pan, you have the butter and oil forming the base for what amounts to a roux: a simple paste of butter and flour that thickens the gravy.

One major tip I would have gathered from my brother-in-law is to just be patient with the roux. Don’t rush it! Scald butter and flour with a gentle heating until it is just touched with a very light golden color, then whisk in the broth. It’s here that the magic to give that good silky texture will be achieved. As the gravy cooks up, thickening into this luscious sauce, the mushrooms just add more deep flavors that are savory goodness. Pour it lustily over the patties, and you’ve got yourself a dish that would give any takeout meal a run for its money. This part really shines when you follow a Jollibee burger steak recipe with an emphasis on the mushroom gravy.

A Budget-Friendly Meal That Feels Special

One of the things I particularly enjoy about this burger steak recipe is how little simple, affordable ingredients transform into something special: ground beef and pork find their way into this dish blended together with flour and butter to make it something so indulgent yet not at all. This was one of the cheapest meals on the fast-food menu at a time when my cousins and I were still young. Making it at home is certainly cheaper without any compromise for the flavor.

Bonus fact: You can play with it to your heart’s content. Don’t have beef broth on hand? Chicken broth works like a charm. Want to add more texture to the gravy? Throw in some caramelized onions or garlic for depth, and it makes for a unique twist on the burger steak.

But What to Pair It With: Rice or Mashed Potatoes?

Now, the question is, do you have it with rice or mashed potatoes? In my place of residence, I always have it served with rice. For whatever reason, there’s something in that savory gravy and soft rice that just does it. And if you are up for a change, then good old buttery mashed potatoes complement this dish well, too, making for a versatile Jollibee burger steak you can enjoy your own way.

Whether you are a beginner in the kitchen or an old home cook looking for some tasty traditional dish, this Jollibee burger steak  recipe is for you, maintaining simplicity and flavor together. It’s home-made flavor, whether it’s to make it for yourself or to share with your loved ones. Bon appétit!

  • 1/3 cup all-purpose flour

Cooking Tips:

Combine Ground Pork and Beef for Savory Patties

Using a mix of ground pork and beef creates a balance of flavors and textures, with the pork fat adding richness to the beef. This combination results in juicy and flavorful patties that are more tender than those made with just one type of meat. Ensure you blend the meats thoroughly to achieve a consistent mixture.

Freeze Patties Before Cooking

Freezing the patties for at least 30 minutes before cooking helps them hold their shape and prevents them from falling apart in the pan. This step also allows the flavors to meld together, enhancing the overall taste. Place the patties on wax paper to make handling and transferring them easier.

Perfecting the Mushroom Gravy

To achieve a smooth and flavorful mushroom gravy, start by creating a light brown roux with butter and flour. Stir continuously to avoid lumps and ensure the mixture doesn't burn, then gradually add the beef broth while whisking to maintain a smooth consistency. Sautéing the mushrooms beforehand intensifies their flavor, making the gravy richer and more aromatic.

This is really good! Tried this today for lunch and the recipe is sensational. I used oyster sauce instead of Worcestershire since we don’t have it in the kitchen! Kudos!!! Would definitely recommend this to my friends.

I tried it just now for lunch with my family and we liked it. Next time I think Ill try for less Worcestershire sauce and pure beef. And I didnt brown the butter flour mixture enough so the gravy did not turn out brown, but light brown, but still good!! So next time will brown it more before adding the beef broth. And ill take the gravy out of the heat earlier so it wouldn’t thicken too much. All in all tho, this is a good copycat recipe…THANKS

Doesn’t taste the same, you have to put Jollibee’s secret ingredient which is MSG, also add Knorr beef cubes to the burger mix and gravy and you would get close to the Jollibee taste.

    • Manny

      August 27, 2018 at 9:03 am

Hi Jason, the recipe already has beef cubes. And I think MSG will help to make the taste close to Jollibee’s burger steak.
