Ginisang Repolyo at Hipon

This is a very simple vegetable using cabbage and shrimps as the main ingredients. It is stir fried cabbage added with shrimps to add flavor into it. Sometimes ground pork or beef is used in cooking this cabbage dish. You might be wondering when you try to cook this dish why call it ginisang repolyo (stir fried cabbage) since it is added with shrimp broth and you have to simmer it to cook the cabbage? Unlike Asian dishes that when you stir fry, you don’t add any liquid, just hot oil. Oh, I think it is the sautéing of garlic, onion and shrimps that is why it is called ginisang repolyo. So if you are searching for a simple to cook vegetable dish, I think this is for you!

How to Cook Ginasang Repolyo at Hipon

This is a very simple vegetable using cabbage and shrimps as the main ingredients. It is stir fried cabbage added with shrimps to add flavor into it.

Ingredients

  • 1 large cabbage slice into large strips
  • 1/4 kilo shrimps with shell
  • 1 Tbsp. oyster sauce
  • 1 piece carrot slice into strips
  • 3 cloves garlic minced
  • 1 piece onion chopped
  • 1 cup water
  • 1 Tbsp. cooking oil
  • 1/4 tsp. ground black pepper
  • 1 tsp. salt or patis

Instructions

How to Cook Ginasang Repolyo at Hipon

  • Slice the cabbage into strips and remove the hard stem on the center.
  • Remove the heads and shell of the shrimps and set aside shelled shrimps. Boil the shells and head in a pot with 1 cup of water for 5 minutes.
  • Let it cool then mash the head and shell using a ladle or masher then strain the liquid using a strainer and discard the shells. Reserve the shrimp juice for later use.
  • In a pan or wok, heat 1 Tbsp. of cooking oil and saute garlic and onion until fragrant. Add the shrimps and saute until it turns to color pink.
  • Add the carrots and saute for 1 to 2 minutes. Add oyster sauce and stir. Add the cabbage and shrimp juice and let it simmer for 2 minutes.
  • Then toss the cabbage to mix all the ingredients. Toss for 2 to 3 minutes until the cabbage is cooked.
  • Season with salt and pepper and toss to mix the seasonings. Serve hot with cooked rice or fried rice.
