Tuna croquettes is great as an appetizer, snack or viand. This dish can also be prepared in any occasions or any special celebrations and very economical too. Because canned tuna is readily available in the supermarket and cheaper than using frozen fish fillets. But you can substitute it with the kind of fish fillet that you want. When buying canned tuna for this recipe, choose tuna solids in brine or oil because it contains a more fish meat than the tuna chunks or tuna flakes and the quality is also better.

To cook tuna croquettes; Saute garlic and onion until onions are soft, then add tuna, salt and black pepper. When cooked, add mashed potatoes and milk and stir cook until the mixture is almost dry. Then add butter and green onion and mix very well. Shape into oval croquettes then roll in lightly beaten eggs (egg wash) and then in bread crumbs. Roll again in egg wash and breadcrumbs then deep fry in hot lard or cooking oil until golden brown. Serve hot and arrange in a bed of lettuce. You can use mayonnaise or sweet and sour sauce as dipping sauce.
