Seafood Salad Calypso

This seafood salad consists of fish fillet, shrimps and scallops. The preparation is very simple, you just need to season the raw seafood before steaming and then dress it with thousand island dressing and garnish it with hard boiled eggs, lettuce, tomatoes and parsley.

To make seafood salad calypso; Marinate the shrimps, lapu-lapu fillet and scallop in calamansi juice, salt and pepper for 2 to 3 minutes. Then steam the seafood for about 8 minutes. Arrange and make a bedding of lettuce in a platter. Put the steamed seafood on the center and decorate with wedges of boiled eggs, sliced tomatoes and parsley. Put thousand island dressing on the seafood and serve.
