Adobo with Peanuts and Bananas (Taguba)

Taguba or adobo with peanuts and bananas is a Visayan dish which is similar to adobo but made more flavorful by the addition of banana blossoms, plantain (saba) and roasted peanuts.

To cook adobo with peanuts and banana blossoms; In a medium side bowl or tupperware, marinate sliced beef and pork in soy sauce, vinegar, garlic, sugar. bayleaf, peppercorns and ginger for 1 to 2 hours.   Soak banana blossoms in a cup of water for at least 30 minutes and set aside. Drain the marinated meat and reserve the liquid. Heat cooking oil in a heavy saucepan and stir fry the liver, pork and beef. Add the marinade and water then bring to a boil. Then lower heat and simmer for 15 minutes or until tender. Then add the banana blossoms and peanuts and simmer for half a minute more. Season with salt and pepper. Garnish with fried saba bananas and serve hot.

Ingredients

  • 1/2 kilo beef slice into cubes
  • 1/2 kilo pork slice into cubes
  • 1/2 cup vinegar
  • 1/4 cup soy sauce
  • 1 Tbsp. garlic crushed
  • 2 Tbsp. brown sugar
  • 1 pc bay leaf
  • 1/4 tsp. peppercorns cracked
  • 1 Tbsp. ginger julienne
  • 1/4 cup dried banana blossoms
  • 1 cup water
  • 2 Tbsp. cooking oil
  • 1/4 kilo pork liver sliced into cubes
  • 1/2 cup roasted peanuts
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3 pcs plantain bananas saba bananas, sliced and fried

Instructions

How to cook Adobo with Peanuts and Banana Blossoms:
