- 1/2 kilo large white fish fillet whole
- 2 Tbsp. olive oil
- 1/4 cup sugar
- 1 tsp. dry mustard
- 1/8 tsp. cinnamon powder
- 1 Tbsp. paprika
- 1 tsp. cocoa powder
- 1/4 cup chili powder
- 1 Tbsp. ground cumin
- 2 tsp. freshly ground pepper
- 1 Tbsp. rock salt
How to cook Choco Spiced Grilled Fish Fillet:
Heat grill pan on medium-high. Smear 1 teaspoon of the olive oil on the bottom of the grill pan.
Whisk together sugar, dry mustard, cinnamon, paprika, cocoa, pepper and salt.
Coat both sides of the fish fillet with remaining olive oil. Place in grill pan.
Sprinkle generously with the cocoa spice mixture and pat down with spatula.
(You can store the left over cocoa spice mixture in a jar on a cool dark place up to 6 months)
Grill the fillet for at least 5 minutes or until it flakes easily with a fork.
Do not overcook or it will become dry.
