  • 1/2 kilo large white fish fillet whole
  • 2 Tbsp. olive oil
  • 1/4 cup sugar
  • 1 tsp. dry mustard
  • 1/8 tsp. cinnamon powder
  • 1 Tbsp. paprika
  • 1 tsp. cocoa powder
  • 1/4 cup chili powder
  • 1 Tbsp. ground cumin
  • 2 tsp. freshly ground pepper
  • 1 Tbsp. rock salt


    How to cook Choco Spiced Grilled Fish Fillet:

    • Heat grill pan on medium-high. Smear 1 teaspoon of the olive oil on the bottom of the grill pan.
    • Whisk together sugar, dry mustard, cinnamon, paprika, cocoa, pepper and salt.
    • Coat both sides of the fish fillet with remaining olive oil. Place in grill pan.
    • Sprinkle generously with the cocoa spice mixture and pat down with spatula.
    • (You can store the left over cocoa spice mixture in a jar on a cool dark place up to 6 months)
    • Grill the fillet for at least 5 minutes or until it flakes easily with a fork.
    • Do not overcook or it will become dry.
