How to Cook Chicken Alfredo

Ingredients

  • 500 grams Fettuccine Pasta
  • 250 grams chicken breast fillet
  • 3 cloves garlic sliced
  • 1 cup cream cheese
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup butter (about 50 grams)
  • 2 Tbsp. olive oil or coconut oil
  • salt and ground black pepper to taste
  • cheddar or filled cheese for topping
  • water for boiling the pasta

Instructions

  • Boil water in a pot just enough to cook the pasta. Add about 1/2 to 1 tablespoon of salt.
  • Cook the Fettuccine pasta according to a package instructions or about 5 minutes. Remove from pot and set aside.
  • Season the breast fillet with salt and pepper. Heat cooking oil in the frying pan and pan fry the breast fillet until cooked on all sides.
  • Remove the chicken fillet from the pan and let it rest for while.
  • In the same pan, sauté the garlic until fragrant. Add the cream cheese and let it simmer in low heat and stir until smooth. Season with salt to taste.
  • Add the pasta and toss until well coated with the sauce. Add some pasta water in the pan if too dry.
  • Add the parmesan cheese and butter then toss again until the butter is melted. Season with pepper.
  • Slice the chicken breast then add it in the pan with the pasta and toss for a few seconds.
  • Transfer to a serving dish and garnish with grated cheese. Serve hot and enjoy!

Cooking Tips:

Don't Overcook the Chicken

Chicken breast can become dry quickly, especially when cooked for too long over high heat. Pan-fry it just until cooked through, then remove it from the pan and let it rest before slicing. This keeps the meat juicier and prevents it from becoming tough when added back to the hot pasta.

Save Some Pasta Water

Reserve some of the water before draining the fettuccine because its starch helps loosen and bind the creamy sauce. Add it a little at a time if the sauce looks too thick or the noodles aren't coating evenly. Avoid adding too much at once, as you can always add more but can't easily remove excess liquid.

Keep the Sauce on Low Heat

Cook the cream cheese over low heat and stir frequently until it becomes smooth and creamy. High heat can cause dairy-based sauces to separate or become grainy, so gentle cooking gives you a better texture. Add the Parmesan and butter near the end and toss gently until melted for a smooth, rich finish.
