Cooking Tips of Ginataang Puso ng Saging:

1. Properly Prep the Banana Heart: The key to a delicious Ginataang Puso ng Saging lies in properly preparing the banana heart. After peeling and slicing the banana heart, soak it in a bowl with coarse salt or sea salt for about 15 minutes. This step helps to draw out the bitter sap, ensuring your dish doesn't have any unwanted bitterness. After soaking, squeeze the banana heart strips multiple times to remove the sap completely. Rinse them in water and drain before using in the recipe.
2. Balancing the Flavors: Ginataang Puso ng Saging is a harmonious blend of savory, creamy, and tangy flavors. To achieve a perfectly balanced dish, pay attention to the amount of fish sauce (patis) and vinegar you add. Start with small quantities and adjust according to your taste preferences. The fish sauce enhances the umami of the dish, while the vinegar adds a tangy kick that complements the creaminess of the coconut milk.
3. Don't Overcook the Banana Heart: Banana heart can become tough and lose its delicate texture if overcooked. To maintain its tenderness and delightful crunch, avoid simmering the banana heart for too long. After adding the banana heart to the pan, simmer it for about 3 minutes until it softens slightly. Overcooking may result in a mushy and unappetizing texture, so it's essential to keep an eye on it while simmering.
