Wash and drain the dressed chicken and remove the tail glands. Cut the breast in the center to make it flat. Remove any remaining innards.
Flatten the chicken by pressing the back of the chicken to make it flat. Set aside.
In a mixing bowl or any container, combine the brining ingredients: salt, sugar, oyster sauce, water and lemon slices. Stir until the salt and sugar are dissolved.
Get a zip lock bag or plastic bag and put in the chicken with the brining solution. Close the bag and remove excess air. Marinate in the refrigerator overnight.
After marinating, remove from bag and drain in a colander or rack. Make the batter by combining flour, cinnamon powder, red chili pepper powder, salt and water.
Mix the batter ingredients until it becomes smooth. Brush the batter on the entire chicken and set aside.
Heat cooking oil in a deep pot and deep fry the chicken for 15 to 20 minutes until golden brown. Prick also the legs and breast with a small knife 5 minutes before the end of cooking time.
Serve with your favorite dipping sauce like gravy or catsup.
