Cut the chicken into serving pieces and set aside. Pound and crush the soda crackers until it becomes like a Japanese or Panko bread crumbs.
In a deep pan or wok, heat 2Tbsp. of cooking oil and saute garlic and onion until soft.
Add the chicken and stir fry until the the skin is slightly brown and the fat renders from the chicken.
Add soy sauce, vinegar, ground black pepper and bay leaves. Bring to a boil and do not stir. Simmer for 10 minutes and cover.
After 10 minutes, add the 7-Up or Sprite softdrinks. Cover and simmer for 15 minutes or until the chicken is tender.
Add in half the sliced siling haba and the crushed soda crackers. Stir until the soda crackers is well mixed with the sauce and becomes thick.
Turn off heat and serve in a serving plate. Garnish with sliced siling haba and fried garlic.
