This chicken salad has generous amount of red delicious apples and flaked chicken. It also have toasted chopped cashew nuts for added crunchiness.

  • 1 1/2 cups Mayonnaise preferably Lady's Choice or Best Foods
  • 1 pack about 200 grams elbow macaroni
  • 2 Tbsp. lemon juice or calamansi juice
  • 2 cups boiled chicken flaked
  • 5 pcs medium size Red delicious apples cored and chopped
  • 1/2 cup celery thinly sliced
  • 1/2 cup cashew nuts toasted and chopped
  • 1 1/2 tsp. salt
  • 3 tsp sugar


    How to make Chicken Waldorf Macaroni Salad:

    • Cook pasta according to the package instructions.
    • But be sure to put 1 Tbsp cooking oil and 1 Tbsp salt on the boiling water before putting the pasta.
    • This will prevent the pasta from sticking or clumping on each other.
    • Drain and rinse in tap water or cold water to prevent overcooking.
    • In a large bowl, combine mayonnaise and lemon juice.
    • Add the remaining ingredients, the chicken, apples, celery and cashew nuts then toss well.
    • Season with salt and sugar then chill.
    • Serve cold.
