How to Make Squash Noodle Soup
Servings: 3 to 4 servings
For the noodles:
- 2 cups all-purpose flour
- 1/2 cup squash boiled and mashed
- 1 Tbsp. margarine
- 1 tsp. salt fine
- 1 pc egg large
- 1/4 tsp. black pepper ground
- 1 tsp. vegetable oil
For the soup:
- 1 Tbsp. vegetable oil
- 3 cloves garlic minced
- 1 small onion chopped
- 1/2 kilo chicken boiled and flaked
- 200 gram cabbage wedge
- 200 gram carrots cubed
- 6 to 7 cup chicken broth
- 10 pcs quail eggs boiled and shelled
- 1/4 tsp. pepper
- 1 tsp. fine salt
- 3 stems spring onions chopped
- pork chicharon pork rind cracklings for garnishing (optional)
How to make squash noodles:
In a bowl, combine all ingredient for noodles. Form into a ball.
Allow dough to rest 10 minutes. Knead the dough and flatten on 2 layers of waxed paper, top and bottom. Cut into long strips like any typical noodle.
How to make Squash Noodle Soup:
Heat cooking oil and saute garlic and onion. Add the chicken, cabbage, and carrots.
Pour chicken broth and simmer for 5 minutes. Add the quail egg and noodles.
Season with salt and pepper. Simmer again for 3 minutes.
Serve hot topped with spring onion and crushed chicharon
