  • ¼ kilo shrimps, shelled
  • ¼ kilo lapu-lapu fillet, sliced
  • ¼ kilo scallops
  • 2 Tbsp. calamansi juice
  • 2┬áhard boiled eggs, sliced into wedges
  • tomatoes, sliced
  • salt and pepper to taste

  • parsley

How to make Seafood Salad Calypso:
  1. Marinate the shrimps, lapu-lapu fillet and scallop in calamansi juice, salt and pepper for 2 to 3 minutes.
  2. Then steam the seafood for about 8 minutes. Arrange and make a bedding of lettuce in a platter.
  3. Put the steamed seafood on the center and decorate with wedges of boiled eggs, sliced tomatoes and parsley.
  4. Put thousand island dressing on the seafood and serve.
