A very delicious and savory stuffed chicken recipe using deboned chicken drumsticks stuffed with chorizo de bilbao, ham, broccoli and bell peppers. This is an ideal dish specially in special occasions like Christmas or New Year celebrations. Even though the ingredients looks overwhelming, they are not hard to find and available on supermarkets and grocery stores.
To cook chorizo stuffed chicken drumsticks; Debone chicken and rub with salt and pepper inside and outside. Prepare filling by combining the stuffing ingredients in a bowl. Stuff chicken and seal edges by folding skin. In a bowl, combine batter ingredients and dip chicken carefully. Fry in butter until golden brown over moderate heat. Remove from butter and arrange in a platter.

Ingredients
- 1 kilo Chicken drumsticks
Stuffing ingredients:
- 1/4 cup chorizo de bilbao chopped
- 1/4 cup chopped ham
- 1/4 cup red pepper
- 1 tablespoon chopped red onion
- 1/2 cup butter
- 2 eggs
- 2 tablespoons all purpose flour
- 1 1/2 teaspoon salt
- 1/4 cup chopped broccoli
- 1 teaspoon minced garlic
Batter Ingredients:
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 2 eggs well beaten
- 1/2 cup butter for frying
Sauce Ingredients:
- 2 tablespoon pineapple juice
- 1/2 cup water
- 2 tablespoon soy sauce
- 1/4 teaspoon salt
- 1 teaspoon butter

- Prepare the sauce by combining all the sauce ingredients except butter, in a saucepan. Boil and then remove from heat. Add the butter and stir until smooth. Serve with chicken.
