How to Cook Macau Style Pork Asado

  • 1 kilo pork chops or spareribs
  • 2 Tbsp. soy sauce
  • ½ cup brown sugar (pack)
  • 1 Tbsp. salt
  • 1 Tbsp. peppercorns (whole)
  • 1 cup water
  • ½ pc bay leaf
  • 5 cloves garlic, minced
  • 1 petal star anise or sanque
  • 4 to 5 pcs dried mushrooms (optional)
  • 1 tsp. MSG
  • ½ cup toasted cashew nuts

How to cook macau style pork asado:
  1. Boil and simmer pork with all the above mentioned ingredients except cashew nuts.
  2. If sauce dries and pork is not yet done, ad more water.
  3. Boil over low fire until sauce thickens.
  4. Add cashew nuts when about to serve.
  5. Garnish with parley or spring onions and cut into 2-inch long sprigs.
  6. Best when served with pickled papaya.
