Ingredients
  • ¾ kilo pork belly (Liempo)
  • ¾ cup unripe jackfruit (langka), sliced ½ inch thick
  • 1 pc medium sized onion, chopped
  • 1 cup kadyos or pigeon pea seeds, soaked for at least 1 hour
  • 1 can tomato sauce or at 1 cup
  • 1 pc green chili peppers or siling haba
  • 1¼ Tbsp. rock salt
  • 1¼ Tbsp. peppercorn, cracked
  • 2 to 3 cups water
  • 1 bunch kangkong or swamp cabbage

Instructions
How to cook Liempo sa Langka:
  1. Combine all ingredients in a pot except the kangkong.
  2. Bring to a boil then lower heat and simmer until tender.
  3. Add the kangkong stalks and simmer for a few minutes more.
  4. Then add the kangkong leaves and simmer for a few seconds then turn off heat and serve.
