Chorizo Stuffed Chicken Drumsticks


1 kilo Chicken drumsticks
1/4 cup chorizo de bilbao, chopped
1/4 cup chopped ham
1/4 cup red pepper
1 tablespoon chopped red onion
1/2 cup butter
2 eggs
2 tablespoons all purpose flour
1 1/2 teaspoon salt
1/4 cup chopped broccoli
1 teaspoon minced garlic

How to cook Chorizo Stuffed Chicken Drumsticks:

  • Debone chicken and rub with salt and pepper inside and outside. Prepare filling by combining the rest of ingredients in a bowl. Stuff chicken and seal edges by folding skin.

1 cup all purpose flour
1/2 teaspoon salt
2 eggs, well beaten
1/2 cup butter for frying

  • In a bowl, combine batter ingredients and dip chicken carefully. Fry in butter until golden brown over moderate heat. Remove from butter and arrange in a platter.

2 tablespoon pineapple juice
1/2 cup water
2 tablespoon soy sauce
1/4 teaspoon salt
1 teaspoon butter

  • Prepare the sauce by combining all the ingredients except butter, in a saucepan. Boil and then remove from heat. Add the butter and stir until smooth. Serve with chicken.
